Crab salad

This salad is very easy to prepare and it is really delicious and healthy. You can make it with any sea fruits you like.

Ingredients:
130-150 g. /about 5 oz./ of sea fruits you prefer

/crab rolls, shrimps, herring or fillet of any other kind of fish/

140 g. /about 5 oz./ of mayonnaise

140 g. /about 5 oz./ of yogurt

dill, black pepper, garlic

You might also want to add: ground walnuts, olives and a little lemon juice

Preparation instructions:

Cut finely the sea fruits you choose for this recipe. I put crab rolls. Mix it with the other ingredients. Serve the salad with slices of lemon olives and fresh parsley. This meal could be perfect combined with a glass of white wine. ūüôā

 Today`s recipe is for potato balls. There are a few things you should know before you start to prepare them and I will share them with you. But before that check out the needed ingredients:

 Ingredients: 500 gr. (about 1 pond) of potatoes, 200 gr. (about 7 oz.) of white or yellow cheese, 2 eggs, 2-3 tbsp. of flour, bread-crumbs,1 red onion, savory, salt, dill, vegetable oil

 Preparation instructions:

  Wash the potatoes and boil them in salty water. Do not peel them, otherwise they will absorb water and your mixture will be too liquid. Than wait until they cool up. Peel them and smash them with a fork. Add the white/yellow cheese, the grated onion, 1 egg and the spices. If the mixture is not thick enough you could add some flour. Than form flat balls and deep them in the second egg and in flour and bread-crumbs. Fry them in a lot of oil or in a ceramic coated pan with less fat.Serve them with green fresh salad and a slice of lemon. Enjoy!

Home-made Chicken Liver Pate

Home-made chicken liver pate

I decided to try at home an interesting recipe for chicken liver pate. Check it out.

Ingredients for the pate: 1/2 kg. (about 1 pound) of chicken livers, 1/2 small onion, 1 garlic clove, 2 boiled yolks, 25 gr. (about 1 oz.) of butter, 1 tbsp. of vegetable oil, savory, salt, black pepper

For the decoration: 1/4 of chicken stock cube, 1/4 pack of gelatin, turmeric, pickles (gherkins), 2 boiled whites, 1 grilled and peeled red pepper, olives

 Preparing instructions:

Fry the onion and the garlic in the vegetable oil. In a few minutes add the chicken livers and the spices. Than strain everything including the butter and the boiled yolks. If the mixture is too thick dissolve the chicken cube and add it. The perfect pate should be easily spread on a slice of bread.

If you have special guests and you want to surprise them, pour the pate in cups and decorate it with sliced pickles, red pepper, egg whites and olives. Prepare the gelatin separately. Put it in 120 ml. /about 4 fl. oz./ of cold water. Wait until it swells up. Than add the dissolved warm chicken cube and some turmeric powder. Pour the pate cups and leave it cooling up in the fridge.

Easy Dessert – Baked Pears

Everybody would like to prepare something sweet, effective and delicious for special guests or for his family. I just prepared a nice and healthy fruit dessert.

It is really very tempting. I used ripe pears. I cut them in two pieces, peeled them and removed the seeds, but kept the stalks. You could leave the rind of course, because it contains a lot of vitamins, but thus the fruits won`t absorb enough of the topping.

To make the perfect topping use forest honey and aromatic dessert wine. Then bake them in preheat oven. You could serve the pears with cinnamon and garnish them with ice-cream.

  Which are the secret ingredients of a perfect soup? For me it is clear Р fresh vegetables of all possible colours Рgreen, yellow, orange, red, white etc.

  Every colour shows the presence of different healthy components. If you cook during winter it is a good idea to use mainly frozen Рnot canned vegetables.

Ingredients:

2 whole chicken legs
1-2 middle-sized carrots
1-2 middle-sized peppers
1 onion
vegetable oil, salt
and black pepper
vermicelli
parsley and/or celery
1 egg, citron powder

You might also want to add: savory and tomato juice

 Preparation instructions:

Boil the chicken legs and remove the foam. Add the spices and the vegetable Рfinely cut. Leave it boiling about 30 minutes. Take out the chicken legs and bone them.  Then cut the meat and put it back in the sauce pan. Add the vermicelli and in 15-20 minutes pour in 4-5 tbsp. of tomato juice. After 5 minutes remove the soup from the hot-plate and add the greens Рparsley or celery. Beat up one egg with a pinch of citron powder and add it slowly after 20 minutes, when the soup cools up a little.

Cheesecake

Cheesecake with cream cheese and sour cream

This cheesecake recipe is prepared with cream cheese. Its taste is delicate and not too sweet. 

Ingredients for cheesecake`s base:¬†2 cups of ground biscuits,¬†1 ¬Ĺ cups of butter,¬†1 ¬Ĺ cups of ground walnuts

Preparation instructions:

Mix the ingredients with the cold butter, make a ball and leave it in the fridge at least for half an hour. After that take it out and spread it on the bottom of a backing form. Press it well.

Ingredients for the cream:

500 gr. (about one pound) of cream cheese /4 packs of 125 gr../

1 sour cream (about 400 gr. or 14 oz.)

1 2/3 cups of powder sugar

4 eggs

1 tsp. of lemon /or dissolved in water citron powder/

grated lemon rind

Preparation instructions:

Beat the cream cheese with electric whisk, add 4 yolks, the powder sugar, the sour cream and the lemon rind. Beat up egg whites stiff with 1 tsp. of lemon. Than add the whites to the other ingredients slowly and mix them slowly and carefully using a silicone spatula. Thus you will gain extra volume.

Forming the cheesecake:

Pour the cream over the base and bake in preheat oven (180-200 degrees) for about 50 minutes. You could also bake it in water bath.  After you turn off the oven don`t take the cake out immediately but wait until it cools up. Serve it with lemon or orange rinds jam.

Easy Home-made Cheese Pastry – Banitsa

Home-made cheese pastry

This is a specific recipe for the Balkan Peninsula region. It is prepared from filo pastry. That name comes from the¬†Greek¬†word for “leaf”. In my country – Bulgaria we call this meal “banitsa”.

¬† The¬†Turkish dessert ¬†“baklava” and the Greek¬†tiropita¬†are prepared from the same layered pastry.

  If you don`t make by yourself the filo leaves and just buy them from the supermarket, this recipe is so easy to prepare. It is also very delicious and effective.

  I will share the secrets of preparing filo pastry at home in one of the next articles. Now check out what you need for the banitsa:

Ingerdients:

1 pack of filo pastry – 400 gr.

3-4 eggs

350-400 gr. (12-14 oz.) of cheese

1 cup of lemonade /–ĺ–ļ. 120-130 ml./

about 40 ml. of vegetable oil

butter

Preparation instructions:

Whisk the eggs. Add the crumbled cheese, the oil and the lemonade.  Oil the baking dish and put one of the filo pastry leaves at the bottom. Cover it with 3-4 tbsp of the filling. Spread it evenly. Then repeat this until you run out of leaves. It is a good idea to pleat them to fit in your backing dish. Put some butter at the top and spread it. Bake it in preheat oven for about 30-40 minutes. Enjoy!!!

Fish Salad

 Salmon fish salad with peppers, onion, cucumbers and olives This salad is very effective and easy to prepare. It is also a great cocktail of vitamins and healthy omega-3 fatty acids.

So check out the ingredients for 2 portions: 200 gr. ( 7 oz.) of salmon, tuna, etc., 1 cucumber, 1 middle-sized red onion, 2 red grilled and peeled peppers, olives, lemon, parsley, sea salt, olive oil. You might also want to add sesame or flax seed.

 

 Preparation instructions:

Remove the pin bones from the salmon and tear it in small pieces. Cut the cucumber in half circles. You could remove the seeds if you want. Slice the onion in thin strips. Cut the peeper  Mix all the ingredients and spice it up according to your taste. Serve it decorated with olives, parsley and sesame or flax seed.

Light, delicious and dietetic dessert

This recipe besides being delicious and dietetic is also not an expensive one. Everybody could prepare it even someone that have never been in the kitchen. As you may see on the pictures, this dessert looks just amazing!

 
Ingredients: 1 sour cream Р400 gr. /14 ounces/, the same quantity of yoghurt, 1 pine-apple can, 1 pack of lady fingers /biscuits/, 1 gelatin

you may also want to add: honey, cinnamon, almonds, sesame seeds etc.

Preparing instructions:

 Open the pine-apple can. Use part of the juice to moisturize the lady fingers. In middle-sized panmix the sour cream, the yogurt and the pine-apple. Put the gelatin in half a cup of cold water. Wait until it hardens. Then melt it in the microwave or in water bath. Add it to the other ingredients. Mix well and add some sugar powder or honey if you want. Arrange the lady fingers /biscuits/ on top. Leave it in the fridge to harden up at least for 3-4 hours. Then take out the pan, dip it in hot water for a while and turn it upside down over a tray.

  Serve it with your favourite jam or with honey. Dust with cinnamon, nuts or seeds on your choice. You could eat this cake even if you are on a diet Рjust don`t put any sweet ingredients. The pine-apple is famous for its properties to burn fats!

Vegetable Lasagna

vegetable lasagna Lasagna is a very delicious, but usually a high-calorie meal so we can`t afford to eat it if we try to lose weight. But wait  Рis there some way to make this Italian meal a part of a healthy diet?

  Yes, if we are inventive Рeverything is possible. You should just replace the high-calorie pasta with something else. I will recommend you one of my successful experiments.

  The ingredients are not in strict proportions, because you could change them according to your personal taste and your backing dish`s size :). Here is what I used for my vegetable lasagna:

Ingredients:

4 middle-sized eggplants

/they`d better be white/

about 200 gr. /7 ounces/of cheese or curd

grated yellow cheese or tofu

3-4 field mushrooms

thicken tomato juice

olive oil

sea salt

Preparation instructions:

 Cut the eggplants in middle-sized slices. Put some salt on them and wait for the bitter juice to drain out . Wash them and dry them using kitchen paper. Fry them in a ceramic coated pan with almost no oil.

  Put one layer of the eggplant slices in a backing dish then another one with grated yellow cheese (tofu), crumble cheese (curd), mushrooms and tomato juice. Repeat this until you finish all the ingredients. You could add some savory, salt or black pepper if you want. Then bake it until it is ready.

  Why thus prepared the lasagna is healthy?

  Compared to the one prepared with pasta, the vegetable lasagna contains less calories. Although eggplants are not recommendable for people with kidney problems, they are famous for their antioxidant properties. No need to mention the incredible benefits of tomatoes that contain a lot of vitamins and even when cooked remain part of their healthy components (lycopene). The tofu and the curd are great sources of easily assimilated proteins and contain essential amino acids. Mushrooms are rich in minerals.

So don`t worry you could include this lasagna in your dietetic menu. Enjoy!
