Delicious Home-made Cake

Home-made fruit cake

This cake is one of my favorite. It is so delicious!

Most of the people who taste it for the first time, always ask for the recipe. Some of our guests that can`t even cook  write down the preparation details and the ingredients. Probably they wanted  their wives or mothers to prepare the cake for them.

Anyway, this is not a diet or healthy recipe, but it is a marvelous combination of fresh fruits, sour cream and cream cheese.

Just try it, you won`t be sorry!


Ingredients for 3 cake layers:

6 eggs

1 cup of sugar

1 ½ cup of flour

1 ½ pack of baking powder

1-2 packs of vanilla powder

You could buy ready cake layers,

but this one I recommend.

Preparation instructions:

Beat up egg whites stiff. Using a mixer whisk the yolks, the flour and the baking and  vanilla powder together. The mixture should be homogeneous and fluffy. Slowly add the egg whites. You`d better use a silicone spatula. Divide  the mixture in three and bake in a form with a non-stick coating about 25 cm /63.5 inches/ in diameter. If your form is just usual – spread some cooking oil and flour on the bottom to be sure that your cake layers will easily come off.

Ingredients for the cream:

1  sour cream – 400 ml. /about 14 oz.)

1 pack of  cream cheese (125 gr. – 4,5 oz.)

1 small pack of confectionery cream (200 ml. – 7 oz.)

1 cup of sugar powder

(If the cake will be transported you could put ½ pack of gelatin)

Preparation instructions for the cream:

Stir together the cream cheese and the sugar powder. Then add the the sour cream. Use a mixer to beat up the confectionery cream separately  but be careful  because it could become a “butter” if you do this for a long time. Then mix all the ingredients together and make a homogeneous cream.

Assembling the cake:

After the cake layers cool down spread over any jam you like. It goes well with tart fruits – blueberries, raspberries,    blackberries etc.  For decoration on the top put fresh fruits and gelatinize it with some juice mixed with two packs of gelatin. Leave the cake to cool down in a fridge.
