Crab salad

This salad is very easy to prepare and it is really delicious and healthy. You can make it with any sea fruits you like.

Ingredients:
130-150 g. /about 5 oz./ of sea fruits you prefer

/crab rolls, shrimps, herring or fillet of any other kind of fish/

140 g. /about 5 oz./ of mayonnaise

140 g. /about 5 oz./ of yogurt

dill, black pepper, garlic

You might also want to add: ground walnuts, olives and a little lemon juice

Preparation instructions:

Cut finely the sea fruits you choose for this recipe. I put crab rolls. Mix it with the other ingredients. Serve the salad with slices of lemon olives and fresh parsley. This meal could be perfect combined with a glass of white wine. ūüôā

Potato Balls

 Today`s recipe is for potato balls. There are a few things you should know before you start to prepare them and I will share them with you. But before that check out the needed ingredients:

 Ingredients: 500 gr. (about 1 pond) of potatoes, 200 gr. (about 7 oz.) of white or yellow cheese, 2 eggs, 2-3 tbsp. of flour, bread-crumbs,1 red onion, savory, salt, dill, vegetable oil

 Preparation instructions:

  Wash the potatoes and boil them in salty water. Do not peel them, otherwise they will absorb water and your mixture will be too liquid. Than wait until they cool up. Peel them and smash them with a fork. Add the white/yellow cheese, the grated onion, 1 egg and the spices. If the mixture is not thick enough you could add some flour. Than form flat balls and deep them in the second egg and in flour and bread-crumbs. Fry them in a lot of oil or in a ceramic coated pan with less fat.Serve them with green fresh salad and a slice of lemon. Enjoy!

Home-made Chicken Liver Pate

Home-made chicken liver pate

I decided to try at home an interesting recipe for chicken liver pate. Check it out.

Ingredients for the pate: 1/2 kg. (about 1 pound) of chicken livers, 1/2 small onion, 1 garlic clove, 2 boiled yolks, 25 gr. (about 1 oz.) of butter, 1 tbsp. of vegetable oil, savory, salt, black pepper

For the decoration: 1/4 of chicken stock cube, 1/4 pack of gelatin, turmeric, pickles (gherkins), 2 boiled whites, 1 grilled and peeled red pepper, olives

 Preparing instructions:

Fry the onion and the garlic in the vegetable oil. In a few minutes add the chicken livers and the spices. Than strain everything including the butter and the boiled yolks. If the mixture is too thick dissolve the chicken cube and add it. The perfect pate should be easily spread on a slice of bread.

If you have special guests and you want to surprise them, pour the pate in cups and decorate it with sliced pickles, red pepper, egg whites and olives. Prepare the gelatin separately. Put it in 120 ml. /about 4 fl. oz./ of cold water. Wait until it swells up. Than add the dissolved warm chicken cube and some turmeric powder. Pour the pate cups and leave it cooling up in the fridge.

Easy Dessert – Baked Pears

Everybody would like to prepare something sweet, effective and delicious for special guests or for his family. I just prepared a nice and healthy fruit dessert.

It is really very tempting. I used ripe pears. I cut them in two pieces, peeled them and removed the seeds, but kept the stalks. You could leave the rind of course, because it contains a lot of vitamins, but thus the fruits won`t absorb enough of the topping.

To make the perfect topping use forest honey and aromatic dessert wine. Then bake them in preheat oven. You could serve the pears with cinnamon and garnish them with ice-cream.

  Which are the secret ingredients of a perfect soup? For me it is clear Р fresh vegetables of all possible colours Рgreen, yellow, orange, red, white etc.

  Every colour shows the presence of different healthy components. If you cook during winter it is a good idea to use mainly frozen Рnot canned vegetables.

2 whole chicken legs
1-2 middle-sized carrots
1-2 middle-sized peppers
1 onion
vegetable oil, salt
and black pepper
vermicelli
parsley and/or celery
1 egg, citron powder

You might also want to add: savory and tomato juice

 Preparation instructions:

Boil the chicken legs and remove the foam. Add the spices and the vegetable Рfinely cut. Leave it boiling about 30 minutes. Take out the chicken legs and bone them.  Then cut the meat and put it back in the sauce pan. Add the vermicelli and in 15-20 minutes pour in 4-5 tbsp. of tomato juice. After 5 minutes remove the soup from the hot-plate and add the greens Рparsley or celery. Beat up one egg with a pinch of citron powder and add it slowly after 20 minutes, when the soup cools up a little.

Home-made croissants

Croissants are very delicious. They are not the best food if you are trying to lose weight. But don`t forget  that the Frenchmen have them for breakfast on regular basis and they are maybe the thinnest nations of all.  This is probably due  to the fact that they adore red whine which in moderate consumption is known for its rejuvenating effect and anti-oxidant properties.

It is also important to remember that it is better to eat the carbohydrates in the morning in order to have enough time to burn the extra calories.

Besides the home-made croissants contain butter and eggs, which are recently acknowledged to be healthy foods. So check out this delicious croissant recipe:

 

Ingredients:

1 cup of milk

3/4 cup of warm water

1 whole egg+1 yolk

1 tbsp. of sugar

1 pack of dry yeast powder /7gr./

4 cup of flour

1 tsp. of salt

250 gr. /about 9 ounces/ cold hard salt-free butter

Preparation instructions:

Dissolve the yeast in the water. Add the milk, the sugar,  the egg and stir. Put the flour and the salt in a kitchen robot. Cut the butter in cubes and add it to the flour. Pulse 8 times /most of the robots include  this option/. Add the dry mixture to the liquid ingredients. Mix with silicone spatula carefully Рdon`t knead the dough. Cover it and put it in the fridge for one night.

In the next day take out the dough and dust it with flour. Roll it out and fold it in two. Than repeat this two more times. Roll it out and try to make a rectangle whose short side is about 20 cm.

Cut it in triangles and roll it in croissant shape starting from one of the sides and not from an angle. You could put a filling in it according to your personal taste Рjam or yellow cheese etc.  After you are ready leave the croissants rising until they become double in size. Spread the yolk and some crystal sugar over them. Bake them at 200 degrees until they are red. Enjoy!

Mushroom Soup

  mushroom soupMushrooms are low-calorie, delicious food. They contain a cocktail of vitamins (B and D) and micro-elements (potassium, phosphorus, magnesium, copper, zinc etc.)

  So they should be a part of our menu. I recommend this mushroom soup recipe that I learned from my father.

Ingredients:  250 gr. (about 9 oz.) of field mushrooms; 1 middle-sized onion, 3 tbsp. of tomato juice, cooking oil and butter,  2-3 tbsp. of rice, grounded black pepper, salt, parsley and/or celery, savory

Preparation instructions:

Cut the mushrooms and the onion. Fry them in butter and cooking oil (if you use only butter they might easily burn). Wait until the water evaporates. Add the tomato juice and put them in a saucepan. Pour some warm water. After 15 minutes of boiling add the rice. When the soup is ready remove it from the hot-plate and add the fresh parsley (celery). Beat up a middle-sized egg with two pinches of citron powder and after half an hour add it to the soup slowly while stirring.  Enjoy!

Grated salad with potatoes, eggs and yellow cheese

grated salad with eggs and potatoesThis salad is too easy to prepare and it is also very effective and delicious. When I have guests it always finishes first.

Ingredients: 400-500 gr. /1 pound/ potatoes,150-200 gr. /3-3,5 oz/ yellow cheese, 3-4 eggs

For the sauce: 1/2 package of mayonnaise, 100 gr /2,5 oz./ of yoghurt, 1 tsp. of mustard /if you like it/

 

Preparation instructions:

Stir the yoghurt, the maionnayse, and the mustard. Boil the eggs and the potatoes in salty water. Peel them. In a big bowl grate one layer potatoes, one layer of yellow cheese and one layer of eggs. Caramel Cream-Pudding

This recipe is also called “burned sugar cream”

I should admit that this dessert is not recommendable when we try to loose weight, but it is comparatively light and we could use brown sugar to prepare it.

You could eat it in the morning or before training or making exercises in order to burn the extra calories.

Try this recipe, because it is easy to prepare, not too expensive and very delicious!!!

Ingredients:

1 liter /2 1/5 pounds/ of milk

2 cups of brown sugar (or 1 cup of  white sugar)

6 tbsp. of butter

2 yolks

100 gr. /3,5 oz./ of corn starch

Preparation instructions:

Boil the milk. Then melt the butter in a frying pan and add the brown sugar. Wait until you feel the smell of caramel. (If you use white sugar, put the butter in the milk and melt the sugar with 1 tbsp of water. Stir all the time until the colour becomes amber Рnot brown!). Pour the caramelized sugar in the milk and stir until it melts completely. Beat up the yolks, the starch and about 250 ml. of cold water. Add part of the hot milk slowly to the above mixture. At the end mix all the ingredients and poach while stirring all the time until the cream thickens. Pour in glasses or cups and decorate with cream and grounded walnuts.

Delicious Home-made Cake

This cake is one of my favorite. It is so delicious!

Most of the people who taste it for the first time, always ask for the recipe. Some of our guests that can`t even cook  write down the preparation details and the ingredients. Probably they wanted  their wives or mothers to prepare the cake for them.

Anyway, this is not a diet or healthy recipe, but it is a marvelous combination of fresh fruits, sour cream and cream cheese.

Just try it, you won`t be sorry!

 

Ingredients for 3 cake layers:

6 eggs

1 cup of sugar

1 ¬Ĺ cup of flour

1 ¬Ĺ pack of¬†baking powder

1-2 packs of vanilla powder

You could buy ready cake layers,

but this one I recommend.

Preparation instructions:

Beat up egg whites stiff. Using a mixer whisk the yolks, the flour and the baking and  vanilla powder together. The mixture should be homogeneous and fluffy. Slowly add the egg whites. You`d better use a silicone spatula. Divide  the mixture in three and bake in a form with a non-stick coating about 25 cm /63.5 inches/ in diameter. If your form is just usual Рspread some cooking oil and flour on the bottom to be sure that your cake layers will easily come off.

Ingredients for the cream:

1  sour cream Р400 ml. /about 14 oz.)

1 pack of  cream cheese (125 gr. Р4,5 oz.)

1 small pack of confectionery cream (200 ml. Р7 oz.)

1 cup of sugar powder

(If the cake will be transported you could put ¬Ĺ pack of gelatin)

Preparation instructions for the cream:

Stir together¬†the cream cheese and the sugar powder. Then add the the sour cream. Use a mixer to beat up the¬†confectionery¬†cream¬†separately¬† but be¬†careful¬† because it could become a “butter” if you do this for a long time. Then mix all the ingredients¬†together¬†and make a¬†homogeneous cream.

Assembling the cake:

After the cake layers cool down spread over any jam you like. It goes well with tart fruits –¬†blueberries, raspberries,¬†¬† ¬†blackberries etc. ¬†For decoration on the top put fresh fruits and gelatinize¬†it with some juice mixed with two packs of gelatin. Leave the cake to cool down in a fridge.

Golden Goat Cheese Circles

golden goat cheese circlesThis easy and effective appetizer is one of my favorite. It goes well with red wine so I recommend it for this season.  Besides goat cheese you can use any other kind you like.

Preparation instructions:

Cut the cheese using special circle shape or a small glass. Beat up 2 eggs and dip the cheese circles in it. Then dip them again in olive oil and in sesame. Fry them in a hot pan with ceramic coating.

This appetizer looks incredibly good and is so delicious! Enjoy!

Spinach Salad

Spinach salad with lemon, tomatoes, cucunbers and olives

This is an interesting recipe, which is really delicious and healthy. It is like a fresh cocktail of vitamins, antioxidants, micro-elements.

This salad might be a good addition to your holiday table  or you could make it for your family as everyday meal.

It goes well with fish, light meat, cheese and wine. This recipe is effective, easy to prepare and not an expensive one.

Enjoy it in nice company!

Ingredients for 4 portions:

Spinach salad with lemon, tomatoes, cucumbers and olives

Fresh spinach salad

250-300 gr. /about 9-10 oz./ of spinach

1 ¬Ĺ lemon /juice/

1 middle-sized red /white/ onion

2 middle-sized tomatoes /or 7- 8  cherry tomatoes/

1 cucumber

15 olives /black/

Olive oil

Sea salt

You might also want to add: cheese /white, mozzarella, goat cheese with sweet basil/ or fish /tuna/.

Preparation instructions:

Tear the spinach in pieces /remove the leafstalks/ Add the cut onion, cucumber and tomatoes. Pour it with olive oil and the juice of half a lemon. You can add the above proposed products. The salad is for about 4 portions. Enjoy!

Tomato Cream Soup

Tomato cream soupThis recipe is one of my favourite and is a very healthy one too. This soup is a great combination of vitamins, and precious micro-elements and fiber.

It is refreshing and strengthens our immune system. It is amazing that tomatoes preserve their antioxidant properties even after thermal processing.

They are also considered as the perfect food to protect us from malignant disease, especially cancer.

 Enjoy that incredibly delicious and not high calorie soup.

Ingredients:

1 kg. /about 2 pounds/ of tomatoes /you can use tinned tomatoes as well/

1 big carrot

2 onions

1-2 potatoes

6 garlic cloves

parsley or  thyme

400 ml. /14 fl. oz/ of milk

olive oil

salt, sugar, black pepper

1 tbsp. sour cream

 

 Preparation instructions:

Finely cut the onion and the garlic. Stew them in the olive oil. Add the diced carrot and potato. Pour in about 50 ml. / about 1 2/3 fl. oz. of warm water and simmer the vegetables for another 10 minutes. Peel the tomatoes and  put then in the sauce pan as well. After that add the finely cut parsley /thyme/ and the milk. When the soup is ready puree the vegetables and serve it decorated with sour cream. Enjoy!

Light Fruit Dessert

Light fruit dessert

This recipe is for a light and low-calorie dessert. It is also extravagant, but not too expensive or hard to prepare. You can make it for special guests if you want to amaze them.

The original recipe is from Fiesta TV, but I changed it according to my family`s taste. I wanted to make it more practical. The result was great and incredibly delicious.

If your kids don`t prefer to eat fruits, you could serve them this special and even healthy dessert, because it contains citrus juice, rich in Vitamin C.

Ingredients:

1 red grapefruit

low-calorie dessert

10 gr. /about 1/3 oz./ of gelatine

50 gr. /about 12/3 oz./

30 ml.  /about 1 fl. oz./ white wine /sweet/

fresh spearmint leaves /at will/

1 ¬Ĺ ¬†teacup of fresh orange juice

 

For the sauce:

100 gr. /3,5 oz./ of orange jam  /I used orange peels jam/

20 gr. / 2/3 fl. oz./ of squeezed fresh orange

 

Preparation instructions:

Peel the grapefruit. Put it in small bowls or cups. Mix the gelatin and the juice in another vessel and melt them in water bath. Add the honey, the wine and the cut spearmint leaves.

Mix it well and pour it in the cups with the arranged fruits in them. Leave it in the fridge for at least 3-4 hours.

When the dessert is ready take it out from the cups and add the sauce.

Sauce:

Just mix well the orange jam with the fresh orange juice. You might also like to add orange liqueur.

This recipe could be prepared by any kind of fruits you like – strawberries, raspberries, blueberry, peaches with various jams and juices in¬†different¬†combinations. Be creative! ūüôā

Zucchini soup

This recipe I learned from my mother. She makes it usually  in the summer and early autumn when there are a lot of fresh zucchini in the garden of our village house.

But It could be prepared either from fresh or frozen¬†vegetables. It is one of my favourite ‚Äď ¬†easy to prepare, healthy¬†and fresh.

It is also very delicious and it is not time consuming. You could make it for your family as everyday meal or even for special guests.

 

 

Ingredients:

1 zucchini /cougette/

1-2 potatoes

1 onion

1 head of garlic

1 small sour cucumber

4-5 tbsp. of grated tomato or tomato juice

1 tbsp. of rice

cooking oil, salt, dill

black pepper and savory /at will/

1 egg, a little fresh lemon juice or a pinch of citric acid powder

Preparation instructions:

In a middle-sized sauce pan boil ¬†2,5 ‚Äď 3 l. /about 5,5-6,5 pounds/ of water. Add the finely cut onion and garlic. You could put the garlic in whole cloves according to your taste. In a while add the diced potatoes, zucchini ?cougette and the sour cucumber. When the soup starts boiling again put in the rice. After everything is¬†almost¬†ready pour in the tomato juice, the cooking oil and the spices. The soup should be boiling not more than 30-40 minutes. After stopping the hot plate, ¬†beat well the egg and the lemon juice / the citric acid powder/. ¬†Than wait about 20 minutes and add the mixture to the soup very slowly while¬†stirring. Serve it warm.¬†Enjoy!
