Crab salad

This salad is very easy to prepare and it is really delicious and healthy. You can make it with any sea fruits you like.

Ingredients:
130-150 g. /about 5 oz./ of sea fruits you prefer

/crab rolls, shrimps, herring or fillet of any other kind of fish/

140 g. /about 5 oz./ of mayonnaise

140 g. /about 5 oz./ of yogurt

dill, black pepper, garlic

You might also want to add: ground walnuts, olives and a little lemon juice

Preparation instructions:

Cut finely the sea fruits you choose for this recipe. I put crab rolls. Mix it with the other ingredients. Serve the salad with slices of lemon olives and fresh parsley. This meal could be perfect combined with a glass of white wine. ūüôā

Potato Balls

 Today`s recipe is for potato balls. There are a few things you should know before you start to prepare them and I will share them with you. But before that check out the needed ingredients:

 Ingredients: 500 gr. (about 1 pond) of potatoes, 200 gr. (about 7 oz.) of white or yellow cheese, 2 eggs, 2-3 tbsp. of flour, bread-crumbs,1 red onion, savory, salt, dill, vegetable oil

 Preparation instructions:

  Wash the potatoes and boil them in salty water. Do not peel them, otherwise they will absorb water and your mixture will be too liquid. Than wait until they cool up. Peel them and smash them with a fork. Add the white/yellow cheese, the grated onion, 1 egg and the spices. If the mixture is not thick enough you could add some flour. Than form flat balls and deep them in the second egg and in flour and bread-crumbs. Fry them in a lot of oil or in a ceramic coated pan with less fat.Serve them with green fresh salad and a slice of lemon. Enjoy!

Home-made Chicken Liver Pate

Home-made chicken liver pate

I decided to try at home an interesting recipe for chicken liver pate. Check it out.

Ingredients for the pate: 1/2 kg. (about 1 pound) of chicken livers, 1/2 small onion, 1 garlic clove, 2 boiled yolks, 25 gr. (about 1 oz.) of butter, 1 tbsp. of vegetable oil, savory, salt, black pepper

For the decoration: 1/4 of chicken stock cube, 1/4 pack of gelatin, turmeric, pickles (gherkins), 2 boiled whites, 1 grilled and peeled red pepper, olives

 Preparing instructions:

Fry the onion and the garlic in the vegetable oil. In a few minutes add the chicken livers and the spices. Than strain everything including the butter and the boiled yolks. If the mixture is too thick dissolve the chicken cube and add it. The perfect pate should be easily spread on a slice of bread.

If you have special guests and you want to surprise them, pour the pate in cups and decorate it with sliced pickles, red pepper, egg whites and olives. Prepare the gelatin separately. Put it in 120 ml. /about 4 fl. oz./ of cold water. Wait until it swells up. Than add the dissolved warm chicken cube and some turmeric powder. Pour the pate cups and leave it cooling up in the fridge.

Easy Dessert – Baked Pears

Everybody would like to prepare something sweet, effective and delicious for special guests or for his family. I just prepared a nice and healthy fruit dessert.

It is really very tempting. I used ripe pears. I cut them in two pieces, peeled them and removed the seeds, but kept the stalks. You could leave the rind of course, because it contains a lot of vitamins, but thus the fruits won`t absorb enough of the topping.

To make the perfect topping use forest honey and aromatic dessert wine. Then bake them in preheat oven. You could serve the pears with cinnamon and garnish them with ice-cream.

  Which are the secret ingredients of a perfect soup? For me it is clear Р fresh vegetables of all possible colours Рgreen, yellow, orange, red, white etc.

  Every colour shows the presence of different healthy components. If you cook during winter it is a good idea to use mainly frozen Рnot canned vegetables.

2 whole chicken legs
1-2 middle-sized carrots
1-2 middle-sized peppers
1 onion
vegetable oil, salt
and black pepper
vermicelli
parsley and/or celery
1 egg, citron powder

You might also want to add: savory and tomato juice

 Preparation instructions:

Boil the chicken legs and remove the foam. Add the spices and the vegetable Рfinely cut. Leave it boiling about 30 minutes. Take out the chicken legs and bone them.  Then cut the meat and put it back in the sauce pan. Add the vermicelli and in 15-20 minutes pour in 4-5 tbsp. of tomato juice. After 5 minutes remove the soup from the hot-plate and add the greens Рparsley or celery. Beat up one egg with a pinch of citron powder and add it slowly after 20 minutes, when the soup cools up a little.

Iceberg Salad With Tuna

iceberg lettuce with tuna and olivesMy guests liked this salad very much so I decided to share it here. I found some recipes while surfing for new ideas. I just wanted to see what  the suitable ingredients for such salad would be.

Of course, I added something from me and changed a little bit the sauce according to my  taste.

 This salad is impressive, easy to prepare and is not time consuming at all. I recommend it for special family celebrations.

 

Ingredients:

1 ¬†‚ÄěIceberg‚ÄĚ lettuce

1 small can of sweet corn

1 tuna can

15-20 olives /green, black or mix of both/

¬Ĺ ¬†lemon /juice/

For the sauce:

1 light mayonnaise

¬Ĺ 200 gr. /7 oz/ of¬†yogurt

¬Ĺ¬†lemon /juice/

2-3 tsp. of mustard

salt and black pepper

Preparation Instructions:

Tear the Iceberg lettuce to middle-sized pieces. Add the corn, the strained off tuna and the stone-less olives. Squeeze the juice from half a lemon. Stir the sauce ingredients together and pour on every salad portion a little.  Serve the rest of the sauce so everybody could add according to his/her taste. This sauce is also suitable for light meat. You can combine it with white wine. Enjoy!

Omelette With Mushrooms, Onion And Peppers

I was inspired for this recipe from a book for healthy eating ‚ÄúUltra prevention‚ÄĚ by Drs.¬†Mark Hyman¬†and Mark Liponis. The authors pay special attention to the beneficial properties of eggs and they put the stress on the fact that despite egg`s high cholesterol content they could not be ‚Äúguilty‚ÄĚ for the increased levels of bad cholesterol in our bodies.

This recipe includes vitamins from the vegetables and precious¬†micro-elements¬†from the mushrooms. It is an example for the perfect healthy breakfast ‚Äď better than the semi-manufacture oat meal porridge, the fake wholegrain bread and the synthetic margarine.

Ingredients for 2 omelettes:

Omelette with pepers, mushrooms and onions

5 eggs

1 red onion

6-7 middle-sized mushrooms

2-3 red peppers /better baked and peeled/

Salt, freshly ground black pepper

You might also add:

Parsley and/or celery

Some chopped white cheese

Finely cut ham

Preparation instructions:

Fry the sliced mushrooms and peppers together with the spices. Wait until they boil off. Then you could add parsley /celery/. Put them aside.

Beat the eggs well with some salt. Cut the onion in circles and put it in the hot frying pan. When the onion changes its colour a little bit pour in half of the eggs. In a while you might turn the omelette, but it is not obligatory. When everything is ready put half of the fried mushrooms and peppers and add some curd or cheese /at will/. Fold it and repeat the same procedure with the left ingredients for the second omelette. Serve it warm. Enjoy!

Egg Pasta Rolls With Curd And Cheese

egg past -rollsThis recipe is from Fiesta TV. There I watched the preparation of interesting rolls of egg pasta with ricotta, mozzarella and parmigiana.  They called them manicotti. Ricotta is the Italian word for curd.
In that moment I felt like experimenting so I used curd, yellow and white cheese. The result was incredibly delicious. If you prefer meat meals, it is a good idea to add some ham in the rolls.
As you might see on the picture these rolls look really nice and could be a perfect appetizer or you could serve them even as main dish especially if your guests does not prefer meat.
Ingredients:

Egg pasta:

3 teacups of flour

4 eggs

1 tsp. of olive oil

¬Ĺ tsp. of salt

warm water for the dough

Preparation instructions:

Mix together in a bowl  the eggs, the olive oil and the salt. Beat them well. Add them gradually to the flour. Knead the mixture until you make homogeneous dough. If it is too dry, add some water. Put the dough into a bowl and cover it with packaging film. Leave it resting about an hour at room temperature. Roll out the dough and cut the pasta in squares. Boil them in salty water about five minutes.

For the filling:

500 gr. (about one pound) fresh curd

tomato juce

boiled pasta squares

2 eggs

1 tsp. of salt

1 ¬Ĺ ¬†cup of fresh white cheese on cubes

1 cup of grated yellow cheese

¬Ĺ ¬†cup of fresh chopped parsley

¬ľ tsp. freshly ground black pepper

120 gr. (about 4 ounces) grated yellow cheese (parmigiana)

Preparation instructions:

Strain the curd well. Prepare the tomato sauce and the pasta squares. Beat well the eggs and the salt. Add the curd, the cheese cubes and the parsley. Mix them.

Heat the oven up to 220 degrees. Spread ¬Ĺ cup of the sauce on the bottom of the baking dish. Put 3 tbsp. of the filling in each pasta square and make rolls. Place all of them over the tomato sauce and dust them with ¬†¬Ĺ cup of grated yellow cheese (or¬†parmigiana). Cover the baking dish with aluminium foil and than use a fork to perforate it

Bake for 20 minutes and than uncover and put the rest of the cheese. Turn it back in the oven and wait for another 20 min until the cheese becomes golden brown.

Chocolate Mousse

Delicious chocolate mousse

Recently I received a very¬†delicious gift from a friend of mine that works in a¬†confectionery¬†company. She gave me three big pieces of¬†¬†dark chocolate. What a nice¬†surprise!Scenes from “Chocolate”movie /with¬†Johnny¬†Depp/ pop up in my head in this very moment. Whoever has watched¬†it knows what I am talking about!¬†¬†So I decided to go in the kitchen and cook up something really nice ūüôā

I surfed the internet for interesting recipes. I crossed upon two or three very tempting ones. I mixed them and the result was really great.

Although  it is not a good thing to eat chocolate when you are trying to loose weight, don`t forget that the dark chocolate is maybe the healthiest sweet temptation. It contains iron and is famous for its antioxidant properties. It also helps to cheer up after a hard day and is used in the anti-age therapy. So it is good for us to include it now and than in our menu.

Ingredients:

160-170 gr. dark chocolate /5,5 -6 ounces/

3 yolks

1 2/3 tbsp. cacao

5 tbsp. strong black coffee /espresso/

200 ml. /7 ounces/ confectionery cream

Depending on the cacao percentage in the chocolate, you might want to add some brown sugar. I myself wold prefer not to.

  Preparation instructions:

Mix the cacao, the yolks and the espresso. Put them on the hot-plate. It is a good idea to heat them in water bath by using another vessel with boiling water. Stir constantly. When the yolks start to boil down, add the grated chocolate. Wait until it melts completely. The mixture should be homogeneous. After that remove it from the hot-plate and leave it cooling up.

Beat the cream well. Then add it carefully to the chocolate mixture using silicone spatula. Pour the mousse in cups and leave it in the¬†fridge for several hours. Dust it with grated¬†chocolate¬† before you serve it. The taste is very strong. Eat it in small portions ūüôā
